About this experience
Once a week, I cook kaiseki the way my first sensei taught me: eight courses, seasonal vegetables from Nishiki Market, and four hours of preparation that you'll never see but will taste in every bite. There is one table. Whoever sits at it is my guest for the evening. We eat slowly, we talk, and by the end of the soup course most people have forgotten they're in Kyoto. The price covers everything except what you choose to drink beyond the pair of carafes I open with dinner. I take one booking per week. That's the arrangement.
