I've been cooking izakaya food at home since my second year in Tokyo โ the stuff that doesn't make it onto menus anymore. You'll eat whatever I'm making that evening: dashimaki tamago that takes thirty minutes to fold properly, grilled ginkgo nuts with salt, chicken thigh marinated overnight in sake and miso, maybe some sashimi if the fish looked right at Tsukiji that morning. We drink sake I've been choosing for twelve years. I only do this on nights I feel like it, and I only take bookings I'm in the mood for. That's the deal.
