About this experience
Most people hit Nishiki at midday โ packed, overpriced, exhausting. I go at 9 am when vendors are still setting up, the tofu shop hands out free samples, and the tsukemono stalls smell exactly like my grandmother's kitchen. We'll taste our way through: pickled plum, fresh yuba, dashi-maki tamago, a sliver of grilled mochi from the stall that's been there since my mother was young. We end with a cup of warm sake at a two-seat standing bar before the tour groups arrive.
